Just finished my dual temp controller for the wine cooler incubator, And yes the cooler works.
The controller has two power outlets, one for the cooler and an outlet for the heat cord.
I have set the controller at 29 deg with a differential of 1. deg both ways, so when the temp in the incubator hit 30.the cooler kicks in and turns of when it hits 29 again. And if the temp go's the other way and drops down to 28 deg, then the heat comes on and heats back up to 29, and so on it go's.
I also have a 6 min Delay on the cooler side, this is to protect the fridge. Compressor. Meaning that it takes 6 min for the cooler to turn on ones it reaches 30 deg, stops the compressor turning on and of too soon.
All going well it should keep a steady temp inside the incubator.
I like your thinking. If you house is excessively hot I can see the need for the cooler otherwise I just though normal drop in temp would be ok. The 6 minute delay might be enough for the temp to drop naturally.

Incubator is up in the shed and most day the ambient temp in the shed is 35/36.
Temp in the incubator can get up to 33 with the thermostate off.
I know afew people that run the same set up I'm going to do with great results.
Up here in Cairns, with the 6 min compressor delay, temp will not drop too much on its own.

I'm very happy with the way the incubator is working.
